Cerasuolo is a typical Abruzzo wine made ​​from Montepulciano grapes in white, that is to say without the contact of grape skins with the must during the maceration. The color is called just “cirasce” (in the Abruzzese dialect means cherry), hence the name, the taste is dry and goes by hints of almond fruits (apples, pears, plums, peaches and cherries of course).

TECHNICAL CHARACTERISTICS

  • AGE OF VINEYARDS: 10 – 15 years;
  • SYSTEM OF GROWTH: Tendone;
  • VARIETY OF GRAPES: 100% Montepulciano;
  • GRAFTING: 157 – 140 Ruggieri;
  • NUMBER OF STUMPS PER ACRE: 1.600;
  • AMOUNT OF WINE PER ACRE: 130 Hl;
  • PERIOD OF HARVESTING: First decade of October;
  • PROCESSING OF GRAPES AND FERMENTATION OF THE MUST: Soft crushing, fining of the must and controlled temperature fermentation;
  • REFINING AND AGEING OF THE WINE: It rests 4 month in tanks made of stainless steel, later it is refrigerated and filtered. Its commercialization begins 4 – 5 months after harvesting;
  • ANALITICAL DATA: Alcohol 12,50% vol. – Acid total 5,50‰;
  • ORGANIC EXAMINATION: Bright rosè with purplish hues, intense fruity and cherry nose with a touch of flowers;
  • GASTRONOMIC COMBINATIONS: Food to serve with: entrèes, fish and meat dishes, roast white meats. To be served cool at 10°- 12°C.
