Since only 7 different DOC form. Its wide spread is due to its ability to adapt to different types of terrain and weather conditions, high productivity and characteristics of the resulting wine, generally pleasant and correct. Is neutral enough to be used in conjunction with other wines from the more distinct personality, without overwhelming even when used in high percentages.

TECHNICAL CHARACTERISTICS

  • AGE OF VINEYARDS: 20 – 25 years;
  • SYSTEM OF GROWTH: Tendone;
  • VARIETY OF GRAPES: 85% Trebbiano and 15% Chardonnay;
  • GRAFTING: 157 – 140 Ruggieri;
  • NUMBER OF STUMPS PER ACRE: 1.600;
  • AMOUNT OF WINE PER ACRE: 90 Hl;
  • PERIOD OF HARVESTING: Early October for Trebbiano – end of September for Chardonnay;
  • PROCESSING OF GRAPES AND FERMENTATION OF THE MUST: Soft crushing, settling and control of the must fermentation temperature in stainless steel tanks. The must of the Chardonnay grapes ferments in French oak barriques stored in air-conditioned rooms;
  • REFINING AND AGEING OF THE WINE: The Trebbiano rests 6 months in stainless steel tanks, Chardonnay 6 months in barriques. Later it is refrigerated and filtered. Its commercialization begins 4 – 5 months after harvesting;
  • ANALITICAL DATA: Alcohol 12% vol. – Acid total 5,80‰;
  • ORGANIC EXAMINATION: Yellow-staraw with golden highlight and greenish hues, fruity, pleasant nose with the scent of tropical fruit and hints of honey and vanilla;
  • GASTRONOMIC COMBINATIONS: Fish dishes, delicate meat dishes and semi-mature cheeses. To be served cool at 8°- 10°C.
